Ingredients
  

  • 6 large Potatoes, peeled and cubed
  • 1 whole Onion, diced
  • 8 slices Bacon, cooked and crumbled
  • 2 cups Shredded Cheddar Cheese
  • 3 cups Chicken Broth
  • 2 cups Heavy Cream
  • 2 tbsp Ranch Seasoning Mix
  • to taste Salt
  • to taste Pepper

Method
 

  1. Add the cubed potatoes, diced onion, chicken broth, and ranch seasoning mix to the crock pot and stir to combine.
  2. Cover the crock pot and cook on low for 6-7 hours or high for 3-4 hours until the potatoes are tender.
  3. Once the potatoes are tender, stir in the heavy cream and shredded cheddar cheese until melted and smooth.
  4. Stir in the cooked and crumbled bacon, reserving some for topping if desired.
  5. Ladle the soup into bowls and top with additional cheese, bacon, and garnish with chives or green onions.
