- Add the cubed potatoes, diced onion, chicken broth, and ranch seasoning mix to the crock pot and stir to combine.
- Cover the crock pot and cook on low for 6-7 hours or high for 3-4 hours until the potatoes are tender.
- Once the potatoes are tender, stir in the heavy cream and shredded cheddar cheese until melted and smooth.
- Stir in the cooked and crumbled bacon, reserving some for topping if desired.
- Ladle the soup into bowls and top with additional cheese, bacon, and garnish with chives or green onions.
