Ingredients
  

  • 400 g white chicken breast
  • 200 g udon, soba, or rice noodles
  • 50 g breadcrumbs
  • 1 egg
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder or flakes
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon sesame oil
  • q.s. Sesame seeds for garnish
  • to taste Salt and pepper
  • for frying oil for the chicken

Equipment

Method
 

  1. 1. Cut the chicken into strips or bite-sized pieces.
  2. 2. In a bowl, whisk the egg with a pinch of salt and pepper.
  3. 3. Dip each piece of chicken into the beaten egg, then coat it generously with breadcrumbs.
  4. 4. Heat some oil in a large skillet over medium heat.
  5. 5. Fry the chicken until golden brown and crispy, about 5-7 minutes per side.
  6. 6. Place the chicken on paper towels to absorb excess oil.
  7. 7. While the chicken is frying, bring a pot of salted water to a boil.
  8. 8. Add your chosen noodles and cook according to package instructions.
  9. 9. Drain the noodles once they’re al dente and set aside.
  10. 10. In a small pan, heat the sesame oil over low heat.
  11. 11. Add minced garlic and grated ginger, stirring until fragrant and lightly golden.
  12. 12. Pour in soy sauce, honey, and chili powder, mixing well.
  13. 13. Let the sauce simmer for a couple of minutes to blend flavors.
  14. 14. Pour the sauce over the cooked noodles and toss to coat evenly.
  15. 15. Divide the spicy noodles among bowls or plates.
  16. 16. Arrange the crispy chicken pieces on top and sprinkle with sesame seeds.
