- Preheat your oven to 350F (175C). Grease and flour three 9-inch round cake pans.
- In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add buttermilk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes.
- Stir in boiling water until the batter is combined; the batter will be thin.
- Divide the batter evenly among the prepared cake pans.
- Bake for 30-35 minutes or until a toothpick inserted comes out clean. Let cool in the pans for 10 minutes before transferring to wire racks.
- In a new mixing bowl, beat softened cream cheese and creamy peanut butter until smooth and creamy.
- Add granulated sugar, flour, and vanilla extract. Mix until well combined.
- Incorporate eggs, one at a time, mixing well after each addition. The filling should be smooth.
- Place one chocolate cake layer on a serving plate. Spread half of the cheesecake filling over it.
- Top with the second chocolate cake layer and add the remaining cheesecake filling.
- Place the third cake layer on top to complete the assembly.
- For the ganache, heat heavy cream in a small saucepan until it simmers. Remove from heat and add chopped chocolate and peanut butter.
- Let sit for 1-2 minutes, then stir until smooth. Allow to cool for 10 minutes.
- Pour ganache over the assembled cake.
