- Preheat your oven to 350°F and grease two round pans.
- In a large mixing bowl, combine the sugar, flour, cocoa powder, baking powder, baking soda, and salt.
- Stir together the dry ingredients, then add the eggs one at a time, mixing well.
- Pour in the almond milk, vegetable oil, and vanilla extract, then mix until smooth.
- Beat the batter on medium speed for 2-3 minutes, then slowly stir in the boiling water.
- Pour the batter into the prepared pans and bake for 35 minutes.
- Check for doneness with a toothpick, then cool the cakes in the pans for 10 minutes.
- For the icing, melt 1/2 cup of margarine, combine with cocoa, add powdered sugar and milk alternately, and mix until smooth.
- Place one cooled cake on a serving plate, cover with half of the frosting, then place the second cake on top and frost the entire cake.
- Chill the cake in the fridge for 30 minutes before serving.
