  • 1 1/4 cups granulated sugar divided
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder divided (use Hershey's Cocoa for best results)
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/3 cup unsalted butter melted
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup packed brown sugar
  • 1 1/4 cups hot water
  • q.s. vanilla ice cream optional, for serving

Method
 

  1. Preheat your oven to 350°F (175°C) and heat a pot of water until very hot, just below a simmer.
  2. In a mixing bowl, combine 3/4 cup of granulated sugar, flour, 1/4 cup of cocoa, baking powder, and salt. Stir in the milk, melted butter, and vanilla extract until smooth.
  3. Pour the batter into a lightly greased 2-quart ceramic dish or a 9-inch square baking pan and spread it evenly.
  4. In a small bowl, mix the remaining 1/2 cup granulated sugar, brown sugar, and remaining 1/4 cup cocoa, then sprinkle evenly over the batter.
  5. Pour the hot water over the top of the cocoa-sugar mixture without stirring.
  6. Bake for 35-40 minutes in a glass dish or 30-35 minutes in a metal pan, until the center is almost set. Let stand for 15 minutes before serving.
  7. Spoon the cake into bowls, ensuring you include the fudgy sauce from the bottom, and serve with vanilla ice cream if desired.
