Ingredients
  

  • 1 cup milk whole or 2%
  • 1 tbsp lemon juice
  • 1.5 cups sugar
  • 100 g culinary margarine
  • 0.5 cup oil
  • 3 egg yolks
  • 2.5 cups wheat flour
  • 1 tsp chocolate powder
  • 1 tsp vanilla aroma
  • 5 tsp red gel food coloring
  • 1 tbsp baking powder
  • 3 egg whites, beaten into stiff peaks
  • 1 stick unsalted butter (200g)
  • 500 g icing sugar
  • 300 g cream cheese
  • 1 tsp vanilla aroma
  • q.s. lemon zest to taste

Equipment

  • Mixer (stand or handheld)
  • Round cake pan (25 cm diameter, with a removable bottom)
  • Wire cooling rack
  • Toothpick
  • Bowls and measuring cups

Method
 

  1. Mix the milk with the lemon juice and set it aside.
  2. Preheat your oven to 180°C.
  3. In a mixer, beat the sugar with the margarine, oil, and egg yolks until you get a light, creamy mixture.
  4. Add the remaining ingredients, reducing the mixer speed as you go.
  5. Pour the batter into a greased and floured 25 cm round pan with a removable bottom.
  6. Bake for about 50 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the cake cool slightly before unmolding it.
  8. Place the cake on a wire rack to cool completely.
