- Melt 2 tbsp of butter in a large pot over medium heat. Add the shrimp and cook for 2-3 minutes until they turn pink. Remove the shrimp and set them aside.
- In the same pot, add the remaining butter, diced onion, minced garlic, celery, and carrot. Sauté for 4-5 minutes until the vegetables are softened.
- Stir in the flour and cook for 1-2 minutes. Slowly whisk in the seafood broth until the mixture is smooth.
- Stir in the heavy cream, Old Bay seasoning, cayenne pepper (if using), salt, and pepper. Simmer for 10-15 minutes until the bisque slightly thickens.
- Fold in the crab, lobster, and cooked shrimp. Simmer for another 5 minutes to meld the flavors.
- Ladle the bisque into bowls, garnish with fresh parsley, and serve with lemon wedges.

Notes
