Ingredients
  

  • 300 g all-purpose flour
  • 200 ml warm water
  • 7 g baker's yeast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 200 g tomato sauce
  • 200 g shredded mozzarella cheese
  • 100 g pepperoni slices
  • to taste Herbes de Provence

Method
 

  1. In a large bowl, whisk together flour and salt.
  2. In a separate small bowl, combine warm water and yeast; let sit for 5 minutes until foamy.
  3. Pour the yeast mixture and olive oil into the flour; mix until shaggy, then knead for 8-10 minutes until smooth.
  4. Place the dough in a bowl, cover, and let rise in a warm spot for 1 hour.
  5. Preheat the oven to 220°C (425°F) for 30 minutes and heat the pizza stone if using.
  6. Roll or stretch the risen dough into a 30cm (12 inches) circle on a floured surface.
  7. Spread tomato sauce evenly over the dough, leaving a border for the crust.
  8. Sprinkle shredded mozzarella over the sauce and arrange pepperoni slices on top.
  9. Add a sprinkle of Herbes de Provence.
  10. Bake for 15-20 minutes until crust is golden and cheese is bubbly.
  11. Let the pizza cool for 3-5 minutes, slice, and serve.
