Ingredients
  

  • 1 pound boneless, skinless chicken breasts, cut into thin strips
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil
  • 1 each bell pepper, sliced (any color)
  • 1 each onion, sliced
  • 1 cup broccoli florets
  • 1 each carrot, peeled and sliced
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1/4 cup chicken broth
  • 2 tbsp oyster sauce
  • 1 tbsp honey
  • to taste salt and pepper
  • for serving cooked rice

Equipment

  • Large skillet or wok
  • Knife and cutting board
  • Bowls for marinating and mixing
  • Spatula or wooden spoon
  • Measuring cups and spoons

Method
 

  1. In a medium bowl, mix the chicken strips with 1 tablespoon of soy sauce and 1 tablespoon of cornstarch, coating well. Set aside.
  2. Wash and slice all your vegetables.
  3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Add the marinated chicken and stir-fry for 4-5 minutes until cooked through and golden. Remove from pan and set aside.
  4. In the same pan, add another tablespoon of vegetable oil, garlic, and ginger, sautéing for 30 seconds. Add onions, bell peppers, broccoli, carrots, and snap peas, stir-frying for 4-5 minutes.
  5. Return the chicken to the pan, whisk together remaining soy sauce, chicken broth, oyster sauce, and honey, then pour over. Stir until sauce thickens, about 2-3 minutes, seasoning with salt and pepper. Serve hot over steamed rice.

Notes

Marinate the chicken for 15-20 minutes for enhanced flavor. Adjust the sauce ratio as per your taste preference. You can substitute chicken with shrimp, tofu, or beef and use your choice of vegetables. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months. Fresh herbs, toasted sesame seeds, or crushed peanuts make excellent garnishes for added flavor and presentation.
