Enoki Bacon Bites

Ingredients
  

  • 200 g enoki mushrooms trimmed
  • 5 slices turkey bacon halved
  • 1/2 tablespoon cooking oil
  • 2 tablespoons chili flakes
  • 2 tablespoons light soy sauce
  • 1/2 tablespoon oyster sauce
  • 1 tablespoon water
  • 1 tablespoon cumin powder

Method
 

  1. Clean the enoki mushrooms, trim off the tough ends, and divide into small bundles of about ten stems each.
  2. Lay a slice of turkey bacon flat, place a bundle of enoki mushrooms at one end, and roll it up tightly, securing it with a toothpick.
  3. In a small bowl, whisk together chili flakes, soy sauce, oyster sauce, water, and cumin powder.
  4. Brush the sauce generously over the wrapped mushrooms and let them sit for 5 minutes.
  5. Heat a non-stick skillet over medium heat with a touch of oil and place the bundles seam-side down.
  6. Cook for 7–8 minutes, turning occasionally, until the bacon is golden brown and crispy.

Notes

For extra crunch, sprinkle toasted sesame seeds over the bites before serving. If you have leftovers, store them in an airtight container in the fridge for up to two days and reheat gently to maintain crispiness. You can freeze uncooked bundles and cook them straight from frozen, adding a couple of extra minutes to the cooking time. Various sauces can be used, such as teriyaki or honey mustard, for different flavor profiles.
