Ingredients
  

  • 1 lb ground beef
  • 1 cup uncooked white rice
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups beef broth
  • 1 tsp paprika
  • 1 tsp cumin
  • to taste salt and pepper
  • for garnish fresh parsley, chopped

Method
 

  1. Start by dicing the onion and bell pepper. Mince the garlic and set aside.
  2. In a large skillet, brown the ground beef over medium heat, breaking it up as it cooks.
  3. Once the beef is browned, add the diced onion and bell pepper. Sauté until softened, then add garlic and cook for another minute.
  4. Add the uncooked rice to the skillet and stir. Pour in the diced tomatoes and beef broth. Stir to combine.
  5. Cover and let it simmer for about 20 minutes, or until the rice is tender and liquid absorbed. Season with salt, pepper, paprika, and cumin.
  6. Garnish with fresh parsley and serve hot.
