Ingredients

  • 1 lb ground beef
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 large bell pepper, chopped
  • 1 can kidney beans, drained and rinsed 15 oz
  • 1 can black beans, drained and rinsed 15 oz
  • 1 can diced tomatoes 14.5 oz
  • 1 can tomato paste 6 oz
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup beef broth
  • 1 tbsp cooking oil

Equipment

  • Large pot or Dutch oven
  • Wooden spoon
  • Measuring cups and spoons
  • Can opener

Method

  1. Heat a tablespoon of cooking oil in a large pot over medium heat. Add the ground beef, breaking it up with a wooden spoon. Cook until it’s browned, about 5-7 minutes. Drain any excess fat.
  2. Add the diced onion, minced garlic, and chopped bell pepper to the pot. Sauté them for 3-4 minutes until they are soft and fragrant. The aroma will fill your kitchen, making your mouth water.
  3. Stir in the kidney beans, black beans, diced tomatoes, and tomato paste. Mix well to combine. The vibrant colors of the vegetables and beans will make your pot look like a feast.
  4. Add the chili powder, cumin, paprika, salt, and black pepper. Stir everything together, letting the spices infuse the mixture. The kitchen will smell amazing, and you’ll be itching to taste it.
  5. Pour in the beef broth and bring the chili to a simmer. Let it cook for about 20-25 minutes, allowing the flavors to meld together. Pro tip: For an extra layer of flavor, add a splash of hot sauce or a pinch of smoked paprika.
  6. To enhance the depth of flavor, add a tablespoon of dark chocolate to the chili during the last few minutes of simmering. The chocolate adds a subtle richness that elevates the dish to a whole new level.
