- If using regular lasagna noodles, boil them until just tender; if using oven-ready noodles, skip this step.
- In a large bowl, combine ricotta, half of the mozzarella, Parmesan, spinach, egg, garlic powder, Italian seasoning, salt, and pepper; stir until smooth and creamy.
- Lay out cooked noodles; spread a spoonful of the ricotta mixture onto each noodle and roll them up.
- Place rolls seam-side down in a baking dish coated with marinara sauce; pour remaining marinara sauce over the top and sprinkle with remaining mozzarella.
- Bake in a preheated oven at 375°F (190°C) for about 25 minutes, or until cheese is bubbly and golden; let rest for 5 minutes before serving.
