- Mix the dry ingredients for the crumb base in a bowl.
- Whisk the egg with 2 tablespoons of water and add it to the dry mix.
- Add the soft butter in pieces into the flour mixture and combine until sandy crumbs form.
- Prepare a baking tray by brushing with butter and dusting with flour.
- Press the crumb mixture into the tray and chill for 30 minutes.
- Preheat the oven to 200°C (390°F) and bake the crumb base for 20-25 minutes until golden brown.
- While it bakes, split and scrape the vanilla beans and steep them in a saucepan with cream and milk.
- Whisk the whole eggs, egg yolks, and sugar in a separate bowl until smooth.
- Remove the vanilla beans from the cream mixture and gently heat before pouring it into the egg-sugar mixture while whisking to temper.
- Return the mixture to the saucepan and heat gently until it thickens slightly.
- Whisk in the mascarpone, quark, vanilla liqueur, starch, lemon zest, and juice.
- Preheat the oven to 160°C (320°F) and pour the custard over the cooled crumb base. Bake for 25 minutes until set with a slight jiggle.
- Cool completely, then sprinkle brown sugar over the top and caramelize using a blow torch or broiler.
