- Preheat your oven to 180°C (350°F).
- In a mixing bowl, beat the eggs with the sugar until the mixture becomes pale and fluffy (about 5-7 minutes).
- Gently fold in the sifted flour and strong coffee.
- Pour the batter into a prepared Swiss roll pan and smooth the surface. Bake for 10-12 minutes.
- While the cake is baking, melt the dark chocolate in a double boiler or microwave. Stir in the heavy cream and rum (if using) to create a ganache.
- Remove the cake from the oven and let it cool slightly on a wire rack. Unroll the cake and spread a layer of ganache over it. Roll it back up and wrap in plastic wrap. Chill in the refrigerator for at least 2 hours.
- After chilling, unwrap the log, spread remaining ganache on top and sides, and decorate with powdered sugar and chocolate shavings. Slice and serve.
