- Heat the Del Real Foods Beef Birria according to the package instructions and separate the meat from the broth.
- Heat oil in a skillet over medium heat and lightly fry each tortilla on both sides until soft and pliable (about 10–15 seconds per side).
- Carefully dip each fried tortilla into the birria broth, coating both sides.
- Place a spoonful of birria meat and a sprinkle of shredded mozzarella cheese onto each tortilla and roll them up tightly.
- Spread a layer of birria broth on the bottom of an oven-safe dish, arrange the rolled enchiladas seam-side down, and pour the remaining broth over the top. Sprinkle more mozzarella cheese on top.
- Preheat your oven to 350°F (175°C) and bake the enchiladas for about 15 minutes until the cheese is melted and bubbly.
- Let cool slightly, garnish with red onion and cilantro if desired, and serve hot.
