- Preheat your oven to 350°F (175°C) and grease an 8-inch square baking dish.
- In a large bowl, combine the flour, baking powder, salt, granulated sugar, and cocoa powder. Stir in the milk, melted butter, and vanilla extract until smooth. Fold in nuts if using.
- In a separate bowl, mix the granulated sugar, brown sugar, and cocoa powder for the topping, then sprinkle this mixture evenly over the batter in the baking dish.
- Slowly pour boiling water over the top of the mixture in the baking dish without stirring.
- Place the baking dish in the preheated oven and bake for 25-30 minutes, until the top is set and the center is no longer batter-like.
- Check for doneness; a toothpick inserted in the center should come out clean.
- Allow the cobbler to cool for a few minutes before serving, ideally with a scoop of vanilla ice cream.
