Ingredients
  

  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup granulated sugar
  • 2 tbsp cocoa powder
  • 1/2 cup milk
  • 1/3 cup melted butter
  • 1 tsp vanilla extract
  • 1/2 cup chopped walnuts or pecans (optional)

Method
 

  1. Preheat your oven to 350°F (175°C) and grease an 8-inch square baking dish.
  2. In a large bowl, combine the flour, baking powder, salt, granulated sugar, and cocoa powder. Stir in the milk, melted butter, and vanilla extract until smooth. Fold in nuts if using.
  3. In a separate bowl, mix the granulated sugar, brown sugar, and cocoa powder for the topping, then sprinkle this mixture evenly over the batter in the baking dish.
  4. Slowly pour boiling water over the top of the mixture in the baking dish without stirring.
  5. Place the baking dish in the preheated oven and bake for 25-30 minutes, until the top is set and the center is no longer batter-like.
  6. Check for doneness; a toothpick inserted in the center should come out clean.
  7. Allow the cobbler to cool for a few minutes before serving, ideally with a scoop of vanilla ice cream.
