Method
 

  1. Clean the octopus thoroughly under cold water and ensure it's fully thawed if frozen.
  2. Bring a large pot of water to a boil, adding the bay leaf and a pinch of salt.
  3. Gently place the octopus in the boiling water and cook for about 40 minutes until tender.
  4. Remove the octopus from the pot and let it cool slightly before slicing it into bite-sized pieces.
  5. Arrange the octopus slices on a serving platter and drizzle with olive oil.
  6. Sprinkle with salt and dust with smoked paprika to finish.
