Method
 

  1. Heat a large skillet over medium heat and brown the ground beef, breaking it apart with a wooden spoon. Sprinkle in the Cajun seasoning, drain excess fat, and set aside.
  2. In the same skillet, add a splash of olive oil or butter, stir in the rice, and toast for 1-2 minutes. Add 2 cups of water or broth, bring to a boil, cover, and simmer until tender.
  3. Once the rice is cooked, stir the beef back into the skillet. Lower heat and sprinkle the shredded cheddar and grated Parmesan over the top, mixing to melt the cheeses into a gooey sauce.
