  • 6 cloves garlic minced
  • ½ cup unsalted butter softened
  • 2 tablespoons fresh parsley chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 1 cup shredded mozzarella cheese optional

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, combine the softened butter, minced garlic, chopped parsley, salt, pepper, and garlic powder. Mix until well blended.
  3. Carefully cut a horizontal pocket into each chicken breast and stuff each pocket generously with the garlic butter mixture.
  4. Heat olive oil in a skillet over medium-high heat and sear the chicken breasts for 3-4 minutes per side until deep golden-brown.
  5. Transfer the seared chicken to a baking dish and bake for 20-25 minutes until the internal temperature reaches 165°F (74°C).
  6. Let the chicken rest for 5 minutes before serving, garnished with a squeeze of lemon juice.
