Ingredients
  

  • 16 oz mushrooms
  • 1 tablespoon olive oil
  • 2 tablespoons butter, divided
  • 6 cloves garlic, minced
  • 1 teaspoon kosher salt
  • 1.5 teaspoons Worcestershire sauce
  • 1.5 teaspoons soy sauce
  • 0.5 teaspoon paprika
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon dried tarragon
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon chili powder
  • 0.5 teaspoon browning sauce (optional)
  • to garnish fresh chives, chopped

Method
 

  1. Clean the mushrooms by wiping them with a damp cloth and trimming any dry parts of the stems.
  2. Heat a medium skillet over medium heat and add olive oil and 1 tablespoon of butter until melted.
  3. Add the mushrooms to the skillet and sprinkle with kosher salt. Cook undisturbed for about 3 minutes.
  4. While the mushrooms are cooking, combine paprika, onion powder, dried oregano, dried tarragon, black pepper, and chili powder in a small bowl.
  5. Add the minced garlic and the spice mix to the mushrooms, stirring well for an additional 1 to 2 minutes until fragrant.
  6. If using, stir in the browning sauce and cook for another 1 to 2 minutes.
  7. Pour in Worcestershire sauce and soy sauce, stirring everything together, and cook for another 2 to 3 minutes to reduce the sauce slightly.
  8. Stir in the remaining tablespoon of butter until melted and mixed through.
  9. Garnish with chopped chives before serving hot.
