- Clean the mushrooms by wiping them with a damp cloth and trimming any dry parts of the stems.
- Heat a medium skillet over medium heat and add olive oil and 1 tablespoon of butter until melted.
- Add the mushrooms to the skillet and sprinkle with kosher salt. Cook undisturbed for about 3 minutes.
- While the mushrooms are cooking, combine paprika, onion powder, dried oregano, dried tarragon, black pepper, and chili powder in a small bowl.
- Add the minced garlic and the spice mix to the mushrooms, stirring well for an additional 1 to 2 minutes until fragrant.
- If using, stir in the browning sauce and cook for another 1 to 2 minutes.
- Pour in Worcestershire sauce and soy sauce, stirring everything together, and cook for another 2 to 3 minutes to reduce the sauce slightly.
- Stir in the remaining tablespoon of butter until melted and mixed through.
- Garnish with chopped chives before serving hot.
