Ingredients
  

  • 8 oz linguine or spaghetti
  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1 lb large shrimp peeled and deveined
  • q.s. salt to taste
  • q.s. pepper to taste
  • 1/4 cup chicken broth
  • Juice of half lemon
  • 1/4 cup chopped fresh parsley
  • q.s. grated Parmesan cheese optional

Equipment

  • Large pot for boiling pasta
  • Colander for draining
  • Large Skillet
  • Wooden Spoon or Spatula
  • Measuring cups and spoons

Method
 

  1. Boil water in a large pot, add salt, and cook pasta until al dente. Drain and reserve about 1/2 cup of pasta water.
  2. In a large skillet, melt butter and olive oil over medium heat. Add minced garlic and stir constantly until fragrant.
  3. Add shrimp in a single layer to the skillet and season with salt and pepper. Cook until shrimp turn pink and opaque, flipping to cook evenly.
  4. Pour in chicken broth and lemon juice, stir to deglaze the pan. Toss in the cooked pasta and add reserved pasta water as needed for sauce consistency.
  5. Sprinkle chopped parsley over the dish and toss again. Serve immediately.
