Ingredients
  

  • 4 large portobello mushrooms, stems removed and gills scraped
  • 3 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 tablespoon balsamic glaze plus more for finishing
  • 8 oz fresh mozzarella, sliced
  • 2 medium tomatoes, sliced
  • to taste fresh basil leaves
  • to taste salt and black pepper

  • Parchment paper
  • Small mixing bowl
  • Pastry brush
  • Knife and cutting board

Method
 

  1. Preheat your oven to 400F (200C) and line a baking sheet with parchment paper.
  2. Mix the melted butter with the minced garlic and Italian seasoning in a small bowl.
  3. Brush the inside of each mushroom with the garlic butter mixture.
  4. Place the mushrooms gill-side up on the prepared baking sheet and roast for 8-10 minutes until tender.
  5. Remove the mushrooms from the oven and layer the insides with mozzarella slices, tomato slices, and basil leaves.
  6. Return the mushrooms to the oven for another 8-10 minutes until the cheese is melted and bubbling.
  7. Drizzle the roasted mushrooms with balsamic glaze and season with salt and pepper before serving.
