Ingredients
  

  • 450 g ground chicken
  • 1/2 cup grated parmesan cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped parsley
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup milk
  • 2 tbsp olive oil
  • 1/4 cup shredded mozzarella cheese optional

Method
 

  1. Preheat your oven to 375°F (190°C) and gather all ingredients.
  2. In a large bowl, combine ground chicken, parmesan, breadcrumbs, parsley, garlic, egg, oregano, salt, and pepper. Gradually mix in the milk until everything is combined without overmixing.
  3. Divide the mixture into four portions and shape into mini loaves. Place on a baking sheet lined with parchment paper and drizzle with olive oil.
  4. Bake for 25–30 minutes. Add mozzarella during the last five minutes if desired. Let the meatloaves rest for a few minutes before serving.
