- Heat olive oil in a Dutch oven and brown the beef cubes in batches until golden.

- Deglaze the pot with a splash of red wine, scraping up the browned bits.
- Return the beef to the pot, add beef broth, rosemary, and thyme, then simmer for about 2 hours.
- Remove herbs, adjust seasoning, and serve hot, garnished with fresh parsley.
