Method
 

  1. Mix the dry ingredients (rice flour and tapioca starch) in a bowl.
  2. Add the wet ingredients (eggs and olive oil) to the dry mixture.
  3. Combine until you get a smooth, slightly sticky dough.
  4. Knead the dough gently and wrap it in plastic.
  5. Let it rest for about 30 minutes.
  6. Roll out the dough thinly using a pasta machine or a rolling pin.
  7. Cut the rolled dough into strips to form fresh pasta.
