  • 250 g pappardelle
  • 8-10 pieces baby bella mushrooms, chopped
  • 1/2 large sweet onion, thinly sliced
  • 4 tablespoons butter
  • 1 tablespoon olive oil
  • 4 cloves garlic, finely chopped
  • 4 drops Worcestershire sauce
  • 1/2 teaspoon kosher salt
  • 180 ml heavy cream
  • 60 g goat cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 60 ml pasta water

Method
 

  1. Start by heating a large skillet over medium-high heat. Add the onions, olive oil, and one tablespoon of butter. Cook until caramelized, about 10 minutes.
  2. Add the remaining butter and toss in the chopped mushrooms. Cook until soft and browned, about 8-10 minutes.
  3. Stir in the garlic and cook for about a minute until fragrant.
  4. Add the salt, Worcestershire sauce, and heavy cream, then bring to a gentle boil. Stir in goat cheese, oregano, red pepper flakes, and lemon juice. Whisk until the cheese melts and the sauce thickens.
  5. Toss in the cooked pappardelle, mixing gently to coat the noodles with the sauce. Adjust the consistency with pasta water if necessary.
  6. Serve hot, topped with sliced filet mignon, freshly grated Parmesan, and a sprinkle of basil.
