Ingredients
  

  • 250 g ground beef
  • 50 g rice vermicelli
  • 1 carrot grated
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 2 dried black mushrooms rehydrated and sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce (nuoc-mam)
  • 1 unit egg
  • 12 unit rice paper wrappers
  • to taste oil for frying

Method
 

  1. Soak the dried black mushrooms in hot water for about 15 minutes.
  2. Soak the rice vermicelli in warm water for 5 minutes until pliable; then drain and snip into shorter pieces.
  3. Chop the onion and mince the garlic; grate the carrot.
  4. In a large bowl, combine ground beef, vermicelli, carrot, onion, garlic, mushrooms, soy sauce, fish sauce, and egg; mix thoroughly.
  5. Dip a rice paper wrapper in warm water until soft, lay flat, place a spoonful of filling in the center, fold sides over, and roll tightly.
  6. Heat oil in a deep pan or fryer, then fry the spring rolls seam side down in small batches until golden brown.
  7. Drain fried spring rolls on paper towels.
  8. Serve with mint leaves and lettuce.
