Ingredients
  

  • 12 units boneless, skinless chicken thighs
  • 1/2 cup olive oil
  • 2 tablespoons honey Dijon mustard
  • 6 cloves garlic, minced (or 3 large cloves)
  • 1 tablespoon salt adjust based on type of salt used
  • to taste dried oregano
  • 1 cup water or broth for the baking pan

Equipment

  • Large mixing bowl
  • Baking sheet
  • Parchment paper or aluminum foil
  • Wooden skewers if not using a rotisserie
  • Perforated aluminum foil

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine chicken thighs, olive oil, honey Dijon mustard, minced garlic, lemon zest, salt, and oregano. Mix until chicken is evenly coated.
  3. If using a vertical rotisserie, thread chicken onto the spit, alternating direction.
  4. If not using a rotisserie, place onion halves on a parchment-lined baking sheet, insert wooden skewers, and stack chicken onto skewers.
  5. Pour water or broth into the bottom of the pan.
  6. Cover chicken loosely with perforated aluminum foil and bake for 75–90 minutes, until golden brown and cooked through.
  7. Baste the chicken halfway through with pan juices.
  8. Let the gyros rest for 5 minutes before slicing and serving.

Notes

For extra flavor, let the chicken marinate for at least an hour or overnight.
