Ingredients
  

  • 400 g boneless, skinless chicken thighs cut into bite-sized pieces
  • 2 cups chopped green onions separate white and green parts
  • 4 tablespoons vegetable oil
  • 2 tablespoons light soy sauce
  • 0.5 tablespoon dark soy sauce
  • 0.5 tablespoon oyster sauce
  • 0.5 teaspoon freshly ground black pepper adjust to taste
  • 2 tablespoons cornstarch

Method
 

  1. In a bowl, mix the chicken pieces with light soy sauce, oyster sauce, black pepper, and cornstarch. Let it sit for 10 minutes.
  2. Heat the oil in a nonstick skillet over medium heat. Add the marinated chicken and cook until golden brown and cooked through.
  3. Toss in the white parts of the green onions first and let them soften for a minute or two. Then add the green parts and stir-fry briefly.
  4. Sprinkle with additional black pepper or garnish with more green onions. Serve hot with steamed rice or noodles.
  5. For best results, use fresh ingredients. Don't skip the marinating step for added tenderness and flavor.
  6. If you have leftovers, store them in an airtight container in the fridge for up to three days. Reheat in a pan to retain texture.
