- Slice the zucchini, bell pepper, and red onion. Place the vegetables in a bowl and drizzle with olive oil. Toss gently to coat.
- Preheat your grill to medium-high heat, ensuring the grates are clean and lightly oiled.
- Place the sliced vegetables on the hot grill and cook for about 3-4 minutes per side until softened and marked.
- Move the vegetables to one side of the grill and carefully place the fish fillets on the grill. Cook for about 4-5 minutes on each side until opaque and flaky.
- Transfer the grilled fish and vegetables to a serving platter. Squeeze fresh lemon juice over the top and garnish with herbs. Serve immediately.
