- Whisk together lemon zest, lemon juice, olive oil, garlic, oregano, thyme, salt, and pepper in a bowl.
- Place chicken breasts in a resealable plastic bag and pour marinade over them, ensuring they are well-coated.
- Let the chicken marinate in the fridge for at least 30 minutes (or overnight if possible).
- Rinse quinoa under cold water.
- In a medium saucepan, combine rinsed quinoa with water or chicken broth.
- Bring quinoa to a boil, then reduce heat to low, cover, and simmer for about 15 minutes.
- Fluff cooked quinoa with a fork and set aside.
- Preheat your grill to medium-high heat.
- Remove chicken from marinade and shake off excess.
- Grill chicken for about 6-7 minutes per side or until internal temperature reaches 165°F.
- While chicken is grilling, bring a pot of water to a boil and place a steamer basket inside.
- Add mixed vegetables to the steamer basket and cover the pot.
- Steam vegetables for 5-7 minutes until tender but vibrant.
