  • 1/3 cup olive oil
  • 2 cloves garlic (grated)
  • 1-2 pieces chili peppers (finely sliced)
  • 1 tablespoon fresh parsley (chopped)
  • 1 juice and zest of lemon

Method
 

  1. Light the barbecue using fire starters and charcoal; let the coals burn until covered with white ash.
  2. In a small pan, heat olive oil over medium heat and add grated garlic and sliced chili peppers; cook for about 2 minutes.
  3. Stir in lemon juice and zest; cook just long enough to soften the garlic without burning it.
  4. Pour half of the sauce over the shrimp and massage it into the shrimp; let sit for 5-10 minutes.
  5. Set up the grill with a clean grate and brush it with oil to prevent sticking.
  6. Grill the shrimp for about 45 seconds to 1 minute per side; look for vibrant orange-pink shells and opaque meat.
  7. Transfer grilled shrimp to a platter, drizzle remaining sauce over, and serve immediately with lemon wedges and crusty bread.
