Ingredients
  

  • 1 lb large shrimp, peeled and deveined
  • 3 tbsp olive oil
  • 1 unit lemon juice Juice of 1 lemon
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • to taste salt and pepper
  • 4 cups mixed salad greens like arugula, spinach, and lettuce
  • 1 unit cucumber, sliced
  • 1 unit bell pepper, sliced
  • 1/2 unit red onion, thinly sliced
  • 1 unit avocado, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • to taste feta cheese, crumbled optional

Method
 

  1. In a medium bowl, combine the shrimp, 2 tablespoons of olive oil, lemon juice, minced garlic, paprika, salt, and pepper. Mix well to coat the shrimp evenly. Let it marinate for about 15 minutes.
  2. While the shrimp is marinating, prepare the salad. In a large bowl, toss the mixed salad greens, sliced cucumber, bell pepper, red onion, and diced avocado. Add the fresh herbs—parsley and cilantro—and mix gently.
  3. Preheat your grill to medium-high heat. Thread the shrimp onto skewers if you prefer, or you can grill them directly on the grates. Grill the shrimp for about 2-3 minutes per side, or until they turn pink and slightly charred.
  4. Once the shrimp are done, remove them from the grill and let them cool slightly. Add the grilled shrimp to the prepared salad. Drizzle the remaining 1 tablespoon of olive oil over the top, and give it a gentle toss. If you like, sprinkle some crumbled feta cheese on top for a creamy, tangy finish.
  5. Serve the Grilled Shrimp Salad immediately, while the shrimp are still warm and the salad is fresh and crisp.
