- Cook the pasta according to package instructions until al dente, then drain.
- In a large skillet, heat olive oil over medium heat.
- Add diced onion and minced garlic, cooking until softened.
- Add the ground turkey, seasoning with salt, pepper, and Italian seasoning, and cook until browned.
- Stir in the diced tomatoes and cook for 5 minutes.
- Add the spinach (or other veggies) and cook until wilted, about 2 minutes.
- If using, pour in the heavy cream and stir to combine.
- Add the cooked pasta to the skillet and toss to mix well with the turkey and vegetables.
- Top with grated cheese and simmer until cheese melts.
- Serve hot, garnished with fresh herbs.
