Ingredients
  

  • 1 pound ground turkey
  • 8 ounces pasta (e.g., penne, spaghetti)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 medium onion, diced
  • 1 can (14.5 ounces) diced tomatoes
  • 2 cups spinach (or broccoli, diced zucchini, or mushrooms)
  • ½ cup heavy cream (optional) optional
  • to taste salt and pepper
  • 1 teaspoon Italian seasoning (optional)
  • ½ cup grated cheese (e.g., mozzarella, Parmesan, or ricotta)

  • Pot for Boiling Pasta

  • Wooden Spoon or Spatula

Method
 

  1. Cook the pasta according to package instructions until al dente, then drain.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add diced onion and minced garlic, cooking until softened.
  4. Add the ground turkey, seasoning with salt, pepper, and Italian seasoning, and cook until browned.
  5. Stir in the diced tomatoes and cook for 5 minutes.
  6. Add the spinach (or other veggies) and cook until wilted, about 2 minutes.
  7. If using, pour in the heavy cream and stir to combine.
  8. Add the cooked pasta to the skillet and toss to mix well with the turkey and vegetables.
  9. Top with grated cheese and simmer until cheese melts.
  10. Serve hot, garnished with fresh herbs.
