- Start by cutting the chicken into bite-sized pieces and washing and chopping your mixed vegetables. Mince the garlic and grate the ginger.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook until they are golden brown and cooked through, about 5-7 minutes. Remove the chicken and set it aside.
- In the same skillet, add another tablespoon of olive oil, then toss in the mixed vegetables, garlic, and ginger. Sauté for about 4-5 minutes, or until the vegetables are tender-crisp.
- In a small bowl, whisk together the soy sauce, honey, and cornstarch. Pour the sauce into the skillet with the vegetables and stir to combine.
- Add the cooked chicken back into the skillet with the vegetables and sauce. Stir everything together and let it cook for another 2-3 minutes. Season with salt and pepper to taste, then garnish with green onions and sesame seeds before serving.
