- Prepare the ingredients by chopping the onion, mincing the garlic, grating the ginger, and dicing the carrot, potato, and bell pepper.
- In a large pot, heat the oil over medium heat and add the chopped onion. Sauté until translucent and slightly golden.
- Add the minced garlic and grated ginger to the pot, and sauté for another minute.
- Stir in the ground cumin, coriander, turmeric, and cayenne pepper (if using), and coat the onions.
- Pour in the can of diced tomatoes and stir well.
- Add the diced carrot, potato, and bell pepper, stirring to combine.
- Add the rinsed red lentils and stir them into the mixture.
- Pour in the vegetable broth and coconut milk, then stir to combine.
- Bring the mixture to a simmer, reduce the heat to low, cover, and let it simmer for 20-25 minutes or until tender.
- Season the curry with salt to taste, mash some lentils for a thicker consistency if desired, and garnish with fresh cilantro.

Notes
