Ingredients
  

  • 1 cup red lentils rinsed and drained
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 1 inch ginger grated
  • 1 can diced tomatoes (14 oz)
  • 1 medium carrot peeled and diced
  • 1 medium potato peeled and diced
  • 1 bell pepper diced
  • 1 can coconut milk (14 oz)
  • 2 cups vegetable broth
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • 1/2 tsp cayenne pepper (optional)
  • 1/2 tsp salt or to taste
  • q.s. fresh cilantro for garnish
  • 2 tbsp oil (olive or vegetable)

Method
 

  1. Prepare the ingredients by chopping the onion, mincing the garlic, grating the ginger, and dicing the carrot, potato, and bell pepper.
  2. In a large pot, heat the oil over medium heat and add the chopped onion. Sauté until translucent and slightly golden.
  3. Add the minced garlic and grated ginger to the pot, and sauté for another minute.
  4. Stir in the ground cumin, coriander, turmeric, and cayenne pepper (if using), and coat the onions.
  5. Pour in the can of diced tomatoes and stir well.
  6. Add the diced carrot, potato, and bell pepper, stirring to combine.
  7. Add the rinsed red lentils and stir them into the mixture.
  8. Pour in the vegetable broth and coconut milk, then stir to combine.
  9. Bring the mixture to a simmer, reduce the heat to low, cover, and let it simmer for 20-25 minutes or until tender.
  10. Season the curry with salt to taste, mash some lentils for a thicker consistency if desired, and garnish with fresh cilantro.

Notes

Always rinse lentils thoroughly before using to remove impurities. For a thicker curry, let it simmer longer or blend part of it. Feel free to add other vegetables like spinach or peas for extra nutrition. A squeeze of lime juice enhances flavor right before serving!
