Ingredients
  

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup unsalted butter, softened
  • cups granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup mashed ripe bananas (about 2 bananas)
  • ½ cup buttermilk
  • 1 cup chopped walnuts
  • 1 8-oz package cream cheese, softened
  • ½ cup unsalted butter, softened (for frosting)
  • 4 cups powdered sugar
  • 1 tsp vanilla extract (for frosting)
  • 2 tbsp heavy cream
  • q.s. chopped walnuts, for garnish to taste
  • q.s. banana slices, for garnish to taste

Method
 

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt; set aside.
  3. In a large bowl, cream the softened butter and granulated sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in vanilla extract and mashed bananas.
  4. Gradually add the dry ingredients to the banana mixture, alternating with buttermilk, and stir in the chopped walnuts until just combined.
  5. Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes until a toothpick inserted comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  6. For the frosting, beat the softened cream cheese and butter until smooth and creamy. Gradually add powdered sugar and beat until light and fluffy. Stir in vanilla extract and heavy cream until spreadable.
  7. Once cooled, spread frosting on top of one cake layer, place the second cake on top, and frost the top and sides.
  8. Garnish with chopped walnuts and banana slices.
