Ingredients
  

  • 1 lbs ground beef
  • 8 oz noodles
  • 2 tablespoons hoisin sauce
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 0.5 cup beef broth
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium carrot, julienned
  • 2 tablespoons vegetable oil
  • to taste salt and pepper
  • to garnish fresh cilantro, chopped
  • to garnish chopped scallions
  • to garnish sesame seeds

Equipment

  • Large skillet or wok
  • Large pot for boiling noodles
  • Colander for draining noodles
  • Wooden spoon or spatula
  • Measuring spoons and cups

Method
 

  1. Start by bringing a large pot of water to a boil, add noodles and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat, add ground beef and cook until browned and no longer pink. Season with salt and pepper, then set aside.
  3. In the same skillet, add the remaining 1 tablespoon of vegetable oil, minced garlic, and finely chopped onion. Sauté until soft.
  4. Add sliced bell peppers and julienned carrot to the skillet and sauté until slightly tender but crisp.
  5. Add the cooked ground beef back into the skillet, stir in hoisin sauce, soy sauce, sesame oil, and beef broth. Simmer for about 5 minutes.
  6. Finally, add cooked noodles to the skillet and toss everything together until noodles are well-coated with the sauce.

Notes

For a healthier version, use lean ground beef or ground turkey and add more veggies like broccoli and snap peas. If you like a spicy kick, consider adding red pepper flakes or Sriracha to the sauce. Ensure to stir the noodles frequently while they're in the skillet to prevent sticking and to coat them evenly with the sauce. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For freezing, portion into containers and store for up to 3 months. Thaw in the fridge before reheating.
