Ingredients
  

  • 1 ½ pounds ground beef (80/20 blend)
  • 1 cup breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg, beaten
  • ¼ cup ketchup, plus extra for topping
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • to taste Salt and pepper
  • 4 medium potatoes, peeled and cubed
  • ½ cup milk
  • 4 tablespoons butter

Method
 

  1. In a large mixing bowl, combine ground beef, breadcrumbs, onion, garlic, egg, ketchup, Worcestershire sauce, thyme, salt, and pepper.
  2. Mix everything together gently with your hands.
  3. Transfer the mixture to a loaf pan or shape it into a freeform loaf on a baking sheet.
  4. Spread a thin layer of ketchup on top of the meatloaf.
  5. Bake the meatloaf in the oven for about 50 minutes.
  6. While the meatloaf bakes, boil the potatoes for the mashed potatoes.
  7. Drain the boiled potatoes and mash them with butter and milk until smooth.
  8. Season mashed potatoes with salt and pepper to taste.
