Ingredients
  

  • 4 medium sweet potatoes, peeled and diced into 1-inch cubes
  • 3 tablespoons olive oil
  • 3 tablespoons honey
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon nutmeg (optional)
  • to garnish fresh parsley or thyme for garnish (optional)

Method
 

  1. Preheat your oven to 400F (200C) and line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large bowl, toss the diced sweet potatoes with olive oil, honey, cinnamon, salt, black pepper, and nutmeg if using.
  3. Spread the sweet potatoes in an even layer on the prepared baking sheet and roast in the preheated oven for 25-30 minutes, flipping halfway through.
  4. Remove the sweet potatoes from the oven and garnish with fresh parsley or thyme if desired. Serve immediately.

Notes
