- Preheat your oven to 400F (200C) and line a baking sheet with parchment paper or a silicone baking mat.
- In a large bowl, toss the diced sweet potatoes with olive oil, honey, cinnamon, salt, black pepper, and nutmeg if using.
- Spread the sweet potatoes in an even layer on the prepared baking sheet and roast in the preheated oven for 25-30 minutes, flipping halfway through.
- Remove the sweet potatoes from the oven and garnish with fresh parsley or thyme if desired. Serve immediately.

Notes
For an extra burst of flavor, add a squeeze of fresh orange juice to the sweet potato mixture before roasting.
