- Peel and cube the potatoes, then place them in salted water and bring to a boil. Cook for about 15-20 minutes until fork-tender.
- Heat olive oil in a skillet over medium heat, season pork chops with salt and pepper, and add them to the skillet. Cook for about 4-5 minutes on each side until browned and cooked through.
- Add minced garlic to the skillet and cook for about 1 minute until fragrant and golden.
- Drizzle honey over the pork chops and garlic, coating the chops evenly. Cook for another 2-3 minutes until well-glazed.
- Drain the cooked potatoes, return them to the pot, add heavy cream and butter, then mash until smooth. Season with salt and pepper to taste.
- Serve the Honey Garlic Pork with a generous dollop of creamy mashed potatoes and garnish with fresh herbs if desired.
