Ingredients
  

  • 4 thighs chicken
  • 2 tablespoons honey
  • 1 unit lime (juiced and zested)
  • 2 tablespoons soy sauce
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • to taste salt and pepper
  • a few sprigs fresh cilantro for garnish

Method
 

  1. In a large bowl, whisk together the honey, lime juice, lime zest, soy sauce, minced garlic, olive oil, salt, and pepper.
  2. Add the chicken thighs to the bowl and toss to coat evenly with the marinade.
  3. Cover the bowl with plastic wrap and let it sit in the fridge for at least 30 minutes or overnight.
  4. Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper.
  5. Arrange the marinated chicken thighs on the sheet, reserving the leftover marinade.
  6. Bake the chicken for 25–30 minutes, basting with the reserved marinade every 10 minutes.
  7. Broil the chicken for an additional 2–3 minutes for a crispy finish if desired.
  8. Remove from the oven, garnish with fresh cilantro, and serve hot.
