Ingredients
  

  • 1.4 kg beef tenderloin
  • 60 ml honey
  • 125 ml grated parmesan
  • 2 tablespoons soy sauce
  • 2 tablespoons minced garlic
  • 2 teaspoons fresh thyme, chopped
  • 1 tablespoon whole-grain mustard
  • 2 tablespoons olive oil
  • 1 teaspoon black pepper
  • 2 tablespoons cornstarch mixed with water
  • 125 ml chicken broth or water

Method
 

  1. Mix honey, parmesan, soy sauce, garlic, thyme, mustard, olive oil, and black pepper in a bowl.
  2. Rub the mixture all over the beef tenderloin, ensuring it is well coated.
  3. Place the beef in a slow cooker and cover it.
  4. Set the slow cooker to low for 8 to 10 hours or high for 3 to 4 hours.
  5. After cooking, remove the beef and slice it into thick pieces.
  6. In the slow cooker, whisk together the cornstarch-water mixture with the cooking juices and chicken broth.
  7. Turn the heat to high and let the sauce simmer for 10 to 15 minutes until thickened.
  8. Plate the sliced beef and spoon the sauce over the top.
