Method
- In a bowl, mix the soy sauce, honey, sesame oil, and grated ginger. Add the beef strips and let them marinate for at least 15 minutes.
- While the beef is marinating, slice the bell pepper and onion.
- Heat the vegetable oil in a wok or large skillet over high heat. Add the marinated beef and stir-fry for about 3-4 minutes until browned and almost cooked through. Remove the beef from the pan and set it aside.
- In the same pan, add the sliced bell pepper and onion. Stir-fry for about 2-3 minutes until they start to soften but still retain their crunch.
- Return the beef to the pan with the vegetables. Add the water and cornstarch mixture, stirring well to combine. Let it simmer for another 2-3 minutes until the sauce thickens and coats everything beautifully.

Notes
Use a high-heat oil like vegetable or peanut oil to prevent smoking. Toast some sesame seeds and sprinkle them over the finished stir-fry for an extra layer of flavor. Adjust the sweetness and saltiness to your taste by adding more honey or soy sauce. This dish can be refrigerated for up to 3 days or frozen for up to 3 months. Reheat with a little water to keep it moist.
