Ingredients
  

  • 4 oz turkey bacon or pancetta, diced (optional)
  • 3 lb beef chuck or brisket, cut into 3 large pieces
  • 1 cup diced onion
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 tablespoon minced garlic
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 cups beef broth
  • 1 can (14.5 oz) crushed tomatoes
  • 1 sprig thyme or 1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried)
  • 1 sprig rosemary or 1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)
  • 1 teaspoon Italian seasoning
  • 2 bay leaves bay leaves

Method
 

  1. Cook the diced turkey bacon or pancetta in a large oven-safe pot over medium heat until crispy, then set aside.
  2. Season the beef generously with salt and pepper and sear it in the rendered fat until it develops a deep brown crust, then transfer to a plate.
  3. In the same pot, toss in the onions, carrots, and celery, and let soften for about 7–10 minutes, then add garlic and red pepper flakes for one minute until fragrant.
  4. Pour in beef broth and crushed tomatoes, scraping up any brown bits from the bottom, then stir in thyme, rosemary, Italian seasoning, bay leaves, and the bacon. Return the beef to the pot, ensuring it’s submerged, cover and cook.
