Ingredients
  

  • 1 pound ground beef (preferably lean, but not extra-lean)
  • 1 medium yellow onion
  • 1 cup fresh parsley (flat-leaf or curly)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper adjust to taste
  • 1 teaspoon seven spices a Middle Eastern spice blend
  • 1 tablespoon vegetable oil for grilling
  • 1 package wooden skewers soaked in water for 30 minutes

Method
 

  1. Peel and quarter the yellow onion and wash and dry the parsley.
  2. In a food processor, combine the onion and parsley and process until finely chopped.
  3. Transfer the mixture to a large bowl and add ground beef, salt, black pepper, cayenne pepper, and seven spices; mix thoroughly.
  4. Divide the mixture and mold it around soaked skewers into 1-inch thick kebabs.
  5. Preheat the grill to medium-high heat and brush it with vegetable oil; grill kebabs for about 4 minutes on each side until cooked through.
  6. Alternatively, bake in a preheated oven at 375°F (190°C) for 15-20 minutes until cooked through.

Notes

You can substitute ground beef with ground lamb or a mix of beef and lamb for a more traditional flavor.
