  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 can tomato sauce (8 oz)
  • 1 cup chicken broth (or vegetable broth)
  • 1 tablespoon chili powder (or to taste)
  • 1 teaspoon cumin
  • 1 teaspoon paprika

Method
 

  1. In a large pot, brown the ground beef or turkey over medium heat, breaking it apart as it cooks. Drain excess fat if needed.
  2. Add chopped onions and garlic to the pot and sauté until soft.
  3. Stir in the bell peppers and any additional veggies; sauté until they begin to soften.
  4. Pour in the canned tomatoes, tomato sauce, broth, and seasonings (chili powder, cumin, paprika, salt, and pepper).
  5. Mix well, then reduce heat to low and let simmer for 20-30 minutes, stirring occasionally.
  6. Adjust seasoning if necessary before serving.
