Ingredients
  

  • 8 oz penne pasta
  • 1 unit Hillshire Farm kielbasa
  • 1 bell pepper
  • 1 onion
  • 2 cloves garlic
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup shredded mozzarella cheese
  • 2 tbsp olive oil
  • Parmesan cheese for serving
  • Fresh basil for garnish (optional)

Method
 

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add sliced kielbasa and sauté until browned, about 5 minutes.
  4. Add chopped onion, bell pepper, and minced garlic to the skillet; cook until vegetables are tender.
  5. Pour in the can of diced tomatoes and stir to combine; let simmer for 5 minutes.
  6. Add the cooked penne pasta to the skillet and mix everything together.
  7. Sprinkle shredded mozzarella cheese over the top and allow it to melt.
  8. Serve the pasta mixture with freshly grated Parmesan cheese and garnish with basil if desired.
