  • 4 fillets cod (about 170g each)
  • q.s. Salt
  • q.s. Freshly ground black pepper
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 2 cloves garlic minced
  • 1 whole lemon for juice and zest
  • 2 tablespoons fresh parsley chopped
  • extra slices lemon for serving

Method
 

  1. Pat the cod fillets dry with paper towels and season both sides with salt and pepper.
  2. Heat the olive oil in a large nonstick skillet over medium-high heat.
  3. Gently place the cod fillets in the skillet and cook for about 4 minutes per side until golden brown.
  4. Flip the fillets carefully, then add the butter and minced garlic to the pan.
  5. Spoon the bubbling butter over the fish until cooked through and easily flaked.
  6. Squeeze lemon juice over the fillets, sprinkle with lemon zest and fresh parsley, then toss gently.
  7. Let the cooked cod rest for 2 minutes before serving.
  8. Serve with extra lemon slices on the side.
  9. This dish pairs nicely with steamed vegetables or a fresh salad.
